Ingredients

  • 1 medium cucumber
  • 8 oz cream cheese (softened)
  • 4 oz smoked salmon
  • 2 tbsp fresh dill (chopped)
  • 12 slices miniature sandwich breads
  • 1 cup unsalted butter (softened)
  • 1 cup sugar
  • 2 cups all-purpose flour
  • Zest of 1 lemon

Instructions

  1. Slice the cucumber into thin rounds.
  2. In a bowl, mix softened cream cheese with chopped dill until smooth.
  3. Spread cream cheese on one side of each bread slice and layer with cucumber and smoked salmon before topping with another slice.
  4. Cut each sandwich into quarters and arrange on a platter.
  5. For shortbread cookies, mix butter, sugar, flour, and lemon zest. Roll out dough, cut into shapes, and bake at 350°F for about 15 minutes or until golden.
  6. Serve sandwiches alongside freshly baked shortbread cookies.
