Ingredients

Scale
  • 1 cup long-grain rice (jasmine or basmati)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/4 cup fresh cilantro or parsley, chopped

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a large saucepan over medium heat, add a splash of oil and sauté the onions until translucent. Add minced garlic and cook for an additional minute.
  3. Stir in cumin, paprika, and turmeric; let sizzle for about 30 seconds.
  4. Add rinsed rice and stir to coat with spices. Pour in vegetable broth and bring to a boil while stirring occasionally.
  5. Reduce heat to low, cover tightly, and simmer for 15-20 minutes until liquid is absorbed. Let sit for an additional five minutes before fluffing with a fork.
  6. Garnish with freshly chopped herbs before serving.
