Ingredients

  • 4 cups ripe Roma tomatoes, halved
  • 1 small red onion, finely chopped
  • 1 jalapeño pepper, seeds removed and minced
  • 1/2 cup fresh cilantro, chopped
  • 2 tbsp lime juice (freshly squeezed)
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the halved tomatoes cut side up on the prepared baking sheet. Drizzle with olive oil and sprinkle with salt.
  3. Add minced garlic and jalapeños around the tomatoes. Roast for about 25 minutes until caramelized.
  4. Allow the roasted tomatoes to cool slightly before chopping into bite-sized pieces.
  5. In a mixing bowl, combine chopped tomatoes with red onion, cilantro, lime juice, and additional salt if needed.
  6. Taste and adjust seasoning as preferred before serving.
