  • 1 medium onion, chopped
  • 1 cup carrots, diced
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tsp cumin powder
  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) coconut milk

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions for about 5 minutes until translucent.
  2. Add minced garlic and grated ginger; stir until fragrant.
  3. Toss in diced carrots and cumin powder; cook for an additional 3 minutes.
  4. Stir in rinsed red lentils and vegetable broth; bring to a boil.
  5. Reduce heat and simmer for about 20 minutes until lentils are soft, stirring occasionally.
  6. Blend the soup until smooth with an immersion blender or regular blender, adding coconut milk gradually to reach desired creaminess.
