  • 2 lbs beef chuck roast, cut into bite-sized cubes
  • 2 cups fresh apple cider
  • 4 medium carrots, chopped
  • 3 medium Yukon Gold potatoes, diced
  • 2 medium onions, chopped
  • 6 cloves garlic, minced
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season the beef with salt and pepper. Chop the carrots, potatoes, onions, and mince the garlic.
  2. In a large pot or Dutch oven over medium-high heat, add olive oil and sear the beef cubes until browned on all sides (about 5 minutes per batch). Remove the beef and set aside.
  3. In the same pot, add onions and garlic; sauté until soft (about 3 minutes).
  4. Return the beef to the pot. Pour in apple cider and enough water or broth to cover by an inch. Add carrots and potatoes.
  5. Stir in thyme and bay leaves. Bring to a gentle boil, then reduce heat to low. Cover partially and simmer for about 2 hours or until the beef is fork-tender.
  6. Serve warm with crusty bread.
