- 2 tbsp olive oil
- 4 cups vegetable broth or water

Instructions
- Prep Your Beans: Soak dried beans overnight in plenty of water. Drain and rinse before cooking.
- Sauté Your Veggies: In a large pot over medium heat, add olive oil. Once shimmering, toss in the chopped onions and bell peppers; sauté until softened (about 5 minutes).
- Add Garlic: Stir in minced garlic and cook until fragrant (about 1 minute).
- Introduce Spices: Sprinkle in ground cumin, chili powder, and smoked paprika. Stir to coat the veggies evenly; cook for another minute.
- Combine Beans: Add soaked (or canned) beans and cover with vegetable broth or water by an inch. Bring to a boil then reduce heat; let it simmer for about 30 minutes.
- Taste Test & Serve: Adjust seasoning with salt and pepper as desired. If needed, continue simmering until desired thickness is reached. Serve warm garnished with cilantro if desired.
