  • 6 slices thick-cut bacon

  • 2 medium Yukon gold potatoes, diced (about 2 cups)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)

Instructions

  1. Prepare your ingredients by chopping the onion and dicing the potatoes into small cubes.
  2. In a large pot over medium heat, cook the bacon until crispy, about 5-7 minutes. Remove and set aside on paper towels.
  3. In the same pot, sauté chopped onions in the residual bacon grease until translucent, around 3-4 minutes.
  4. Add diced potatoes and chicken broth; bring to a boil, then reduce heat and simmer until potatoes are tender, approximately 10-15 minutes.
  5. Stir in fresh or frozen corn and heavy cream; allow to simmer for another 5 minutes.
