  • 4 cups low-sodium vegetable broth
  • 1 cup carrots, chopped
  • 1 cup celery, diced
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, egg, parsley, garlic, salt, and pepper. Mix gently until just combined.
  2. Shape the mixture into 1-inch meatballs and place on a parchment-lined baking sheet.
