  • 1 medium onion, chopped

  • 4 cups low-sodium vegetable broth

  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Halve the pumpkin, remove seeds, and place cut-side down on a parchment-lined baking sheet.
  2. Roast for 30-40 minutes until tender. Let cool slightly, then scoop out the flesh.
  3. In a large pot, heat olive oil over medium heat. Sauté onions and garlic until soft (about 5 minutes).
  4. Add pumpkin flesh, vegetable broth, coconut milk, cinnamon, and nutmeg. Blend until smooth using an immersion blender or regular blender.
