- 2 tbsp olive oil

Instructions
- Dice the onions, carrots, celery, and potatoes into bite-sized pieces. Mince the garlic.
- In a large pot over medium heat, add olive oil. Sauté onions, carrots, and celery until softened (about 5 minutes).
- Add minced garlic, salt, pepper, and bay leaves. Sauté for another minute until fragrant.
- Pour in lentils and vegetable broth; bring to a boil. Reduce heat to simmer for about 30 minutes until lentils are tender.
- Stir in diced potatoes and simmer for an additional 20 minutes until fork-tender.
