- 1 tbsp maple syrup
- Salt and pepper to taste
- ¼ cup pumpkin seeds, toasted
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine Brussels sprouts, sweet potatoes, kale, olive oil, salt, and pepper; toss until well coated. Spread evenly on the baking sheet.
- Roast for 25-30 minutes until golden brown, stirring halfway through.
- Rinse quinoa under cold water. In a pot, combine quinoa with water or broth. Bring to boil; reduce heat, cover, and simmer for 15 minutes until water is absorbed.
