- 1 whole bulb of fresh garlic
- 4 tablespoons unsalted butter
- 1/2 cup heavy cream

Instructions
- Preheat the oven to 400°F (200°C). Slice off the top of the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30 minutes until soft.
- Place the Yukon Gold potato chunks in a large pot filled with salted water; bring to a boil over high heat. Cook until fork-tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Squeeze roasted garlic cloves into the pot along with butter and heavy cream.
- Mash until creamy using a potato masher or hand mixer. Season with salt and pepper according to taste.
