  • 2 pounds Yukon Gold potatoes, peeled and cut into chunks
  • 1 whole bulb of fresh garlic
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Slice off the top of the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30 minutes until soft.
  2. Place the Yukon Gold potato chunks in a large pot filled with salted water; bring to a boil over high heat. Cook until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and return them to the pot. Squeeze roasted garlic cloves into the pot along with butter and heavy cream.
  4. Mash until creamy using a potato masher or hand mixer. Season with salt and pepper according to taste.
  5. Serve warm, garnished with chopped chives or parsley if desired.
