Description

Ingredients

  • 1 lb fresh salmon fillets
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup mayonnaise
  • 2 tbsp sriracha sauce (or to taste)
  • 1 tbsp honey

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the salmon into bite-sized pieces and season lightly with salt and pepper.
  3. Set up three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with a pinch of salt.
  4. Dredge each salmon piece in flour, dip in egg, then coat with panko breadcrumbs.
  5. Place on the prepared baking sheet and spray lightly with cooking spray. Bake for 12-15 minutes until golden brown.
  6. While baking, mix mayonnaise, sriracha, and honey for the sauce.
  7. Serve baked salmon bites drizzled with the sauce.
