- 1 cup panko breadcrumbs

Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the salmon into bite-sized pieces and season lightly with salt and pepper.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with a pinch of salt.
- Dredge each salmon piece in flour, dip in egg, then coat with panko breadcrumbs.

- While baking, mix mayonnaise, sriracha, and honey for the sauce.
