Description

Japanese Fried Chicken, or Chicken Karaage, is a delightful fusion of crispy and juicy that will elevate your dining experience. This easy-to-make dish features tender boneless chicken thighs marinated in a flavorful mix of soy sauce, ginger, and garlic, then coated in cornstarch for that perfect crunch. Whether you’re hosting friends or enjoying a cozy night in, this dish promises to impress with each savory bite.

Ingredients

Scale
  • 1 lb boneless chicken thighs
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp sake or dry sherry
  • 1 tbsp fresh ginger (grated)
  • 3 cloves fresh garlic (minced)
  • 1/2 cup cornstarch
  • Vegetable oil for frying

Instructions

  1. Marinate the chicken: Cut chicken thighs into bite-sized pieces. In a bowl, mix soy sauce, sake, ginger, and garlic. Coat the chicken thoroughly in the marinade and refrigerate for at least 1 hour (or overnight for enhanced flavor).
  2. Prepare the coating: In a separate bowl, place cornstarch. Remove marinated chicken from the fridge and shake off excess marinade before coating each piece in cornstarch.
  3. Heat the oil: Pour enough vegetable oil into a deep pan to cover the bottom by an inch. Heat to about 350°F (175°C).
  4. Fry the chicken: In batches, fry coated chicken pieces until golden brown and crispy—around 4-5 minutes per side.
  5. Drain excess oil: Transfer cooked chicken onto paper towels to absorb extra oil.
  6. Serve hot: Enjoy your Chicken Karaage garnished with lemon wedges or fresh herbs.
