Description

Zucchini fries are a flavorful and healthy alternative to traditional French fries that everyone will love. Crispy on the outside and tender on the inside, these Parmesan zucchini fries are coated with a cheesy crust that makes them irresistible.


Ingredients

  • 2 medium zucchinis (about 300g)
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 tsp garlic powder
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice zucchinis into strips about ½ inch thick.
  3. In one bowl, mix Parmesan cheese, panko breadcrumbs, garlic powder, salt, and pepper.
  4. In another bowl, coat zucchini strips with olive oil.
  5. Dip each zucchini piece into the breadcrumb mixture until fully coated.
  6. Place on the baking sheet in a single layer and bake for 20-25 minutes until golden brown, flipping halfway through.
