- 1 cup panko bread crumbs
- 2 tsp curry powder
- 1 cup coconut milk
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup vegetable broth (low-sodium)
- 2 tbsp soy sauce (low-sodium)
- Cooking oil for frying
Instructions
- Press the tofu between paper towels or in a tofu press for about 30 minutes to remove excess moisture.
- Cut the pressed tofu into thick slabs (about half an inch). Dip each slab in flour, coat with beaten egg or a plant-based alternative, and roll in panko bread crumbs.
- Heat oil in a pan over medium heat. Fry the breaded tofu slices until golden brown on both sides (approximately 3–4 minutes per side).
- In another saucepan, sauté onions until translucent. Add garlic and curry powder; stir until fragrant. Pour in coconut milk and vegetable broth, bringing it to a simmer.
- Gently add fried tofu pieces into the simmering sauce and let them soak up the flavors for about five minutes.
- Serve over cooked rice or quinoa, drizzling extra sauce on top.
