- 1 cup quinoa (rinsed)
- 1 diced red bell pepper
- 1 medium cucumber (diced)
- 2 grated carrots
- 3 chopped green onions
- 1/4 cup fresh cilantro (chopped)
- 1/4 cup peanuts (roughly chopped)
- 3 tbsp creamy peanut butter
- 2 tbsp low-sodium soy sauce
- Juice of 1 lime
- 1 tbsp honey or maple syrup
Instructions
- Rinse quinoa under cold water and combine with 2 cups of water in a pot. Bring to a boil, cover, reduce heat, and simmer for about 15 minutes until water is absorbed. Fluff with a fork.
- While quinoa cooks, chop the bell pepper, cucumber, carrots, green onions, and cilantro in a large mixing bowl.
- In a separate bowl, whisk together peanut butter, soy sauce, lime juice, and honey until smooth.
- Once quinoa has cooled slightly, add it to the bowl with veggies and pour the dressing over the top.
- Toss everything together until well combined. Add chopped peanuts for extra crunch.
- Serve chilled or at room temperature. Enjoy!
