  • 2 cups fresh raspberries
  • ¼ cup granulated sugar
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom and up the sides of a tart pan. Bake for 10 minutes until lightly golden.
  2. In a heatproof bowl, chop dark chocolate. Heat heavy cream in a saucepan until simmering, then pour over chocolate. Let sit for 2 minutes before stirring until smooth.
  3. Stir in vanilla extract and optional sea salt. Pour half of the chocolate mixture into the cooled crust and arrange fresh raspberries on top. Cover with remaining chocolate filling.
  4. Refrigerate for at least 2 hours or overnight until set. Slice and serve chilled or at room temperature.
