  • 4 hard-boiled eggs
  • 2 tbsp fresh lemon juice
  • 1/4 cup finely chopped red onion
  • 2 tbsp fresh dill or parsley (or a mix)
  • Salt and pepper to taste

Instructions

  1. 1. Boil Eggs: Place eggs in a pot, cover with cold water, bring to a boil over medium heat. Cover, remove from heat, and let sit for 10-12 minutes. Drain and cool under cold water.
  2. 2. Mash Avocados: Cut avocados in half, scoop out the flesh into a mixing bowl, and mash with a fork until smooth yet slightly chunky.
  3. 3. Chop & Mix: Peel cooled eggs, chop them into small pieces, and add them to the mashed avocado along with red onion, herbs, lemon juice, salt, and pepper.
  4. 4. Stir Together: Gently fold all ingredients until combined; avoid over-mixing.
