  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 4 cups low-sodium vegetable broth
  • 2 fresh lemons, juiced
  • 2 tbsp extra virgin olive oil
  • 1 cup fresh herbs (dill or parsley), chopped
  • 3 garlic cloves, minced
  • 1 medium onion, chopped
  • Salt and pepper to taste
  • 1 tsp dried oregano

Instructions

  1. In a large pot over medium heat, add olive oil. Once hot, sauté chopped onion and minced garlic until translucent (about 5 minutes).
  2. Drain and rinse the chickpeas, then add them to the pot. Stir to combine with the onions and garlic.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Season with salt, pepper, and oregano. Allow to simmer uncovered for about 15 minutes.
  5. Turn off the heat and squeeze in lemon juice from both lemons.
  6. Serve hot, garnished with fresh herbs and an optional drizzle of olive oil.
