  • 1 cup long-grain white rice
  • 1 can (15 oz) low-sodium black beans, rinsed and drained
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • 2 tbsp extra virgin olive oil
  • ¼ cup fresh cilantro, chopped
  • 1 tbsp lime juice

Instructions

  1. Heat olive oil in a large saucepan over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
  2. Add minced garlic and stir until fragrant, about 1 minute.
  3. Pour in the rice and vegetable broth. Bring to a boil, then reduce heat to low, cover tightly, and simmer for about 20 minutes.
  4. Once the rice is cooked, gently fold in the black beans along with lime juice and cilantro.
