  • 2 large ripe mangoes (peeled and diced)
  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar (light or dark)
  • 1/2 cup unsalted butter (softened)
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix diced mangoes with 2 tbsp brown sugar and a pinch of cinnamon; set aside.
  3. In another bowl, combine oats, flour, remaining brown sugar, and cinnamon. Mix in softened butter until crumbly.
  4. Press two-thirds of the crumble mixture into the prepared pan. Spread the mango filling evenly over it.
  5. Sprinkle the remaining crumble over the mango filling.
  6. Bake for 25-30 minutes until golden brown and fragrant. Let cool before cutting into bars.
