  • 1 pound mixed mushrooms (cremini and shiitake), chopped
  • 1 package (17.3 oz) thawed puff pastry
  • 2 cups fresh spinach, chopped
  • 1 medium onion, finely chopped
  • 23 cloves garlic, minced
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and sauté until translucent, about 5 minutes.
  3. Stir in chopped mushrooms and spinach; cook until tender, about 8 minutes.
  4. Mix in garlic, Dijon mustard, thyme, salt, and pepper. Allow to cool slightly.
  5. Roll out puff pastry on a floured surface. Spoon the cooled filling onto one half of the pastry; fold over and seal edges.
  6. Brush with egg wash if desired. Bake for 25-30 minutes or until golden brown.
