- 1 package (17.3 oz) thawed puff pastry
- 2 cups fresh spinach, chopped

- 2–3 cloves garlic, minced
- 2 tablespoons Dijon mustard
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add onions and sauté until translucent, about 5 minutes.
- Stir in chopped mushrooms and spinach; cook until tender, about 8 minutes.
- Mix in garlic, Dijon mustard, thyme, salt, and pepper. Allow to cool slightly.
