Description

Banana Mini Pancakes are a delightful breakfast treat that combines the natural sweetness of ripe bananas with a light, fluffy texture. Perfect for busy mornings or leisurely brunches, these bite-sized pancakes are quick and easy to prepare. Topped with maple syrup, fresh berries, or a dollop of yogurt, they offer a delicious start to your day that the whole family will adore.

Ingredients

Scale
  • 2 ripe bananas
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup milk (dairy or non-dairy)
  • 1 large egg
  • 2 tablespoons melted butter

Instructions

  1. Mash bananas in a bowl until smooth. Add egg and milk; mix well.
  2. In another bowl, whisk together flour, baking powder, and salt.
  3. Gently combine wet and dry ingredients until mixed (lumps are okay).
  4. Heat a non-stick skillet over medium heat and add melted butter.
  5. Pour 2 tablespoons of batter for each pancake; cook until bubbles form (about 2 minutes), then flip and cook until golden brown (about 1 minute).
  6. Serve immediately with your favorite toppings.

Notes

Use very ripe bananas for optimal sweetness.

Avoid overmixing to keep pancakes fluffy.

Experiment with mix-ins like chocolate chips or nuts for added flavor.
