  • 2 lbs russet potatoes
  • 8 slices bacon
  • 1 cup shredded sharp cheddar cheese
  • 1 cup sour cream (full-fat for best flavor)
  • ½ cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash potatoes and poke holes in them. Wrap in foil and bake for about 1 hour or until tender.
  2. Cook bacon in a skillet over medium heat until crispy (6-8 minutes). Let cool, then crumble into pieces.
  3. In a large bowl, mix sour cream with salt and pepper until smooth.
  4. Cube cooled potatoes and add to the dressing along with crumbled bacon and cheddar cheese.
