Ingredients
Scale
- 1 lb flank or sirloin steak
- 1/4 cup fresh cilantro, chopped
- 1/4 cup freshly squeezed lime juice
- 3 cloves garlic, minced
- 2 cups cooked rice (white or brown)
- 1 cup bell peppers, sliced (red, yellow, or orange)
- 1 ripe avocado, sliced
- Salt and pepper to taste
Instructions
- Marinate the steak: In a bowl, mix lime juice, garlic, cilantro, salt, and pepper. Place the steak in a resealable bag or dish and pour the marinade over it. Refrigerate for at least 30 minutes.
- Cook the steak: Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade (reserve it) and cook for 4-5 minutes per side for medium-rare. Adjust cooking time for desired doneness.
- Sauté bell peppers: In the same pan used for steak, add olive oil and sauté bell peppers until tender yet crisp (about 3-4 minutes).
- Prepare rice: If not already cooked, prepare rice as per package instructions; using broth instead of water enhances flavor.
- Assemble bowls: Layer rice at the bottom of bowls followed by sliced steak, sautéed peppers, and avocado slices.
- Drizzle with marinade: Pour reserved marinade over each bowl before serving.
