  • Juice of 3 fresh limes
  • 4 garlic cloves, minced
  • 2 tbsp honey
  • 3 tbsp extra virgin olive oil
  • 2 bell peppers, chopped (1 red, 1 yellow)
  • 1 medium zucchini, sliced
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa for serving
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together lime juice, garlic, honey, olive oil, salt, and pepper.
