  • 4 medium carrots, peeled and sliced into coins
  • 1 cup cooked green or brown lentils
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, minced (or roasted)
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1 cup hummus (store-bought or homemade)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss carrot coins with olive oil, salt, and pepper on the baking sheet. Roast for 25-30 minutes until golden brown and tender.
  3. While the carrots roast, cook lentils in boiling water for 20-25 minutes until tender. Drain excess water.
  4. In a large bowl, combine roasted carrots, cooked lentils, minced garlic, lemon juice, salt, and pepper. Adjust seasoning as desired.
  5. Serve on plates or bowls topped generously with hummus.
