Ingredients

  • 1 lb carrots (peeled and cut into sticks)
  • 1 cup pearled farro
  • 1 can (15 oz) chickpeas (drained and rinsed)
  • 3 tbsp extra virgin olive oil (divided)
  • 1/2 cup crème fraîche
  • 1/4 cup fresh herbs (dill or parsley, chopped)
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss carrot sticks in 1 tablespoon of olive oil, salt, and pepper. Spread them on the baking sheet.
  3. Roast carrots for 25-30 minutes until tender and caramelized.
  4. In a pot, combine farro with 2 cups of water or vegetable broth. Bring to a boil, then simmer for 20-25 minutes until tender.
  5. In a bowl, mix chickpeas with remaining olive oil, salt, and pepper. Add to the oven during the last 10 minutes of roasting.
  6. For the herbed crème fraîche, combine crème fraîche with fresh herbs and lemon juice in a small bowl.
  7. Serve roasted carrots atop farro and chickpeas; drizzle with herbed crème fraîche.
