  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup fresh or frozen corn
  • 1 red bell pepper, chopped
  • 1 medium yellow onion, diced
  • 2 tbsp taco seasoning
  • 1 cup low-sodium chicken broth

Instructions

  1. Prepare ingredients by chopping the onion and red bell pepper while rinsing the black beans.
  2. Layer chicken in the bottom of the slow cooker. Add black beans, corn, onion, bell pepper, and sprinkle taco seasoning on top.
  3. Pour chicken broth over all ingredients.
