  • 1 lb flank or sirloin steak
  • 1 cup cooked white or brown rice
  • 1 cup bell peppers (sliced)
  • 1 cup corn (fresh or frozen)
  • 1 can (15 oz) black beans (rinsed)
  • ¼ cup fresh cilantro (chopped)
  • Juice of 1 lime
  • 1 avocado (sliced)
  • 2 tbsp chipotle peppers in adobo sauce blended with ¼ cup mayonnaise and juice of ½ lime

Instructions

  1. Cook rice according to package instructions. While cooking, slice the bell peppers and chop the cilantro.
  2. Heat oil in a skillet over medium-high heat. Season steak with salt and pepper; cook for about 4-5 minutes per side until browned and at desired doneness. Let it rest before slicing.
  3. In the same skillet, sauté bell peppers and corn for about 3-4 minutes until tender but crisp.
  4. Assemble bowls by layering cooked rice, sliced steak, sautéed veggies, black beans, cilantro, avocado slices, and drizzling with chipotle sauce. Squeeze lime juice over everything before serving.
