- 1 whole chicken (3–4 pounds)
- 1/4 cup fresh lemon juice
- 6 garlic cloves, minced
- 1 bunch fresh cilantro
- 1/4 cup extra virgin olive oil
- 1 jalapeño pepper, seeds removed (adjust for spice level)
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C) and prepare a roasting pan with nonstick spray.
- In a blender, combine garlic, lemon juice, cilantro leaves, jalapeño, olive oil, salt, and pepper. Blend until smooth.
- Marinate the chicken by rubbing half the sauce all over it in a bowl or resealable bag. Let it marinate for at least one hour.
- Place the marinated chicken in the roasting pan and pour any remaining marinade over it. Roast for about 60 minutes or until the internal temperature reaches 165°F (75°C).
- Allow the chicken to rest for ten minutes before carving and serve with additional spicy cilantro sauce drizzled on top.
