Ingredients

  • 1 cup green or brown lentils
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale

Instructions

  1. Wash and chop all vegetables. Rinse lentils under cold water until clear.
  2. In a large pot over medium heat, add 2 tablespoons of olive oil. Sauté onions, garlic, carrots, and celery for about 5 minutes until softened.
  3. Stir in rinsed lentils and canned tomatoes (with juice). Mix well.
  4. Pour in the vegetable broth and bring to a gentle boil. Reduce heat and let simmer for about 30 minutes until lentils are tender.
  5. Add fresh spinach or kale just before serving until wilted. Adjust seasoning with salt and pepper to taste.
  6. Serve hot with crusty bread on the side.
