  • ½ cup unsalted butter, melted

  • 16 oz mascarpone cheese
  • ¾ cup pure maple syrup
  • 1 cup sour cream (full-fat)

  • 3 large eggs (room temperature)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, melted butter, and sugar; press into the bottom of a springform pan.
  2. In a large mixing bowl, beat mascarpone cheese and sour cream until smooth. Add maple syrup and vanilla; mix well.

  4. Pour filling over crust and bake for 50-60 minutes until slightly jiggly in the middle.
  5. Turn off the oven, leave cheesecake inside with door ajar for 1 hour to cool slowly. Refrigerate for at least 4 hours before serving.
