- 3/4 cup granulated sugar
- 4 large eggs
- 1/2 cup heavy whipping cream (cold)
- 2 tbsp powdered sugar
- 4 oz bittersweet chocolate (high-quality)
- 2 tbsp unsalted butter
Instructions
- Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper and grease lightly.
- In a mixing bowl, beat eggs and granulated sugar until light and fluffy. Gradually fold in sifted flour and cocoa powder.
- Pour batter into the prepared pan, spreading evenly. Bake for 12-15 minutes or until a toothpick comes out clean.
- Invert the cake onto a powdered sugar-dusted towel, remove parchment, and roll tightly while warm. Let cool completely.
- Whip heavy cream with powdered sugar until soft peaks form. Unroll the cooled cake, spread whipped cream evenly, and roll back up without the towel.
- For ganache, melt chocolate and butter together until smooth. Allow to cool slightly before pouring over the rolled cake.
