Ingredients

Scale
  • 4 cups all-purpose flour
  • 2 1/4 tsp active dry yeast
  • 1/2 cup granulated sugar
  • 1 tsp salt
  • 1 cup warm milk (110°F)
  • 1/4 cup melted butter
  • 2 tsp ground cinnamon
  • 1/2 cup brown sugar
  • 2 cups diced tart apples (like Granny Smith)
  • 1/2 cup chopped pecans (optional)
  • 1/2 cup unsalted butter (for browning)
  • 1 cup powdered sugar
  • 1/4 cup pure maple syrup

Instructions

  1. Prepare the Dough: In a large bowl, mix warm milk, sugar, and yeast. Let it sit until frothy (about 5 minutes). Gradually add melted butter, salt, and flour until a soft dough forms. Knead on a floured surface until smooth.
  2. Let It Rise: Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place until doubled in size (about 1 hour).
  3. Roll It Out: Punch down the dough and roll it into a rectangle (1/2 inch thick) on a floured surface.
  4. Fill: Spread softened butter over the dough. Sprinkle cinnamon and brown sugar evenly, then add diced apples (and nuts if using).
  5. Roll Up: Starting from one long edge, tightly roll into log shape and cut into equal pieces (about 1 inch thick). Place cut-side up in a greased baking dish.
  6. Bake & Ice: Cover and let rise again for another 30 minutes while preheating oven to 350°F. Bake for about 25 minutes until golden brown. Meanwhile, prepare the icing by browning butter and whisking in powdered sugar and maple syrup.
