  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 1 cup mascarpone cheese

  • 2 tsp espresso powder

  • 8 oz dark chocolate (at least 70% cocoa)

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine chocolate cookie crumbs and melted butter. Press into the bottom of a tart pan to form the crust. Bake for 10 minutes until set.
  2. In another bowl, whisk together mascarpone cheese, sugar, espresso powder, and vanilla extract until smooth.

  4. In a saucepan over low heat, combine heavy cream and chopped dark chocolate until melted and smooth. Pour ganache over the mascarpone filling.
