Description

Classic Pad Thai tossed in rich peanut sauce is a vibrant dish that captures the essence of Thai cuisine. With soft rice noodles enveloped in a creamy, savory peanut sauce and topped with crunchy peanuts and fresh herbs, this meal is not only visually appealing but also utterly satisfying.


Ingredients

  • 8 oz flat rice noodles
  • 1 cup firm tofu (pressed and cubed) or 1 cup chicken (diced)
  • 1/4 cup natural peanut butter
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp lime juice (freshly squeezed)
  • 1/4 cup fresh cilantro (chopped)
  • 1/4 cup chopped peanuts (for garnish)
  • 1 tbsp sesame oil (for cooking)
  • 2 tbsp water
  • Optional: chili paste to taste

Instructions

  1. Soak rice noodles in hot water for about 30 minutes until pliable but not mushy. Drain and set aside.
  2. In a large skillet over medium heat, add sesame oil and cook tofu or chicken until golden brown on all sides, about 5 minutes. Remove from skillet.
  3. In a bowl, mix peanut butter, soy sauce, brown sugar, lime juice, and water until smooth. Add chili paste if desired.
  4. In the same skillet, combine drained noodles with the peanut sauce. Stir-fry for about 5 minutes until heated through and well-coated.
  5. Fold in chopped cilantro just before serving and sprinkle with chopped peanuts.
