Ingredients

  • 1 cup fresh figs, chopped
  • 1 cup whole milk ricotta cheese
  • 1/2 cup heavy cream
  • 1/4 cup honey (plus more for drizzling)
  • 1/4 cup granulated sugar
  • 1 tsp pure vanilla extract

Instructions

  1. Rinse figs gently under cold water and pat them dry.
  2. In a mixing bowl, blend ricotta cheese, heavy cream, sugar, vanilla extract, and half of the honey until smooth.
  3. In another bowl, combine remaining chopped figs with the rest of the honey; stir gently.
  4. Fold half of the fig mixture into the ricotta blend. Pour into an ice cream maker and churn according to instructions (or transfer to an airtight container).
  5. Freeze for at least four hours until firm.
  6. Serve scoops topped with remaining fig sauce and a drizzle of honey.
