  • 1 cup whole milk (or almond/oat milk)
  • ¾ cup vegetable oil
  • 1 tsp vanilla extract
  • 2 cups heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans with nonstick spray and dust with flour.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt until combined.
  3. In another bowl, whisk eggs, milk, vegetable oil, and vanilla extract until smooth. Gradually add to dry ingredients and mix until just combined.
  4. Divide the batter evenly between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Let cool completely.
  5. For the frosting, whip heavy cream in a chilled bowl until soft peaks form. Gradually add powdered sugar and vanilla extract; continue whipping until stiff peaks form.
  6. Assemble the cake by placing one layer on a serving plate, spreading half of the frosting on top before adding the second layer. Frost the top and sides of the cake with remaining whipped cream.
