- 2 cups fresh broccoli florets, chopped
- 1 cup shredded sharp cheddar cheese
- 1 cup breadcrumbs (plain or seasoned)
- 2 large eggs
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking sheet with nonstick spray or parchment paper.
- Steam the chopped broccoli for about three minutes until bright green but still crunchy. Let cool.
- In a large bowl, combine the steamed broccoli, cheddar cheese, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Scoop about two tablespoons of the mixture and roll into balls. Place them on the prepared baking sheet with space in between each ball.
- Bake for 20-25 minutes or until golden brown and crispy on the outside.
