  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup mayonnaise
  • 3 tablespoons sriracha sauce (adjust to taste)
  • 1 tablespoon honey

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In one bowl, whisk eggs until frothy. In another bowl, mix flour with salt and pepper. Place panko breadcrumbs in a third bowl.
  3. Dip each chicken breast into the flour mixture, then into the eggs, and finally coat with panko.
  4. Arrange coated chicken on the baking sheet and bake for 20-25 minutes until golden brown and cooked through.
  5. While baking, mix mayonnaise, sriracha, honey, and a pinch of salt in a small bowl to make the sauce.
