These easy-to-make fritters are perfect as an appetizer or side dish, making them ideal for busy weeknights or impressing guests at gatherings. Serve them warm with a tangy yogurt sauce or your favorite dipping sauce for an irresistible flavor experience.

Ingredients

Scale
  • 2 cups cauliflower florets
  • 2 large eggs
  • 1 cup breadcrumbs
  • ½ cup grated cheese (cheddar or parmesan)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh cilantro or parsley (optional)

Instructions

  1. Boil salted water in a pot and cook the cauliflower florets until tender, about 5 minutes. Drain and let cool.
  2. In a bowl, mash the cooked cauliflower until slightly lumpy.
  3. Mix in eggs, breadcrumbs, grated cheese, garlic powder, salt, and pepper (add herbs if using).
  4. Shape the mixture into patties about 1 inch thick and place on a parchment-lined baking sheet.
  5. Heat olive oil in a non-stick skillet over medium heat. Fry fritters in batches until golden brown, about 3-4 minutes per side.
