- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup BBQ sauce
- 6 cups romaine lettuce, chopped
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- 1 cup shredded cheddar cheese
- 2 tbsp olive oil
- 2 tbsp freshly squeezed lemon juice
Instructions
- Preheat grill or grill pan over medium-high heat. Season chicken with salt and pepper and coat with BBQ sauce.
- Grill chicken for 6-7 minutes per side until internal temperature reaches 165°F (75°C), basting with more BBQ sauce halfway through cooking.
- While chicken grills, chop romaine lettuce and slice cucumber, tomatoes, and red onion.
- In a large bowl, combine chopped veggies and shredded cheese; toss gently.
- Let the grilled chicken rest for five minutes before slicing into strips.
- Add sliced chicken on top of the salad mixture; drizzle with olive oil and lemon juice before tossing again.
