- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 cup shredded carrots
- 28 oz can whole peeled tomatoes
- 2 tbsp tomato paste
- 2 tsp Italian seasoning
- 12 oz spaghetti or fettuccine
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté chopped onion until translucent, about 5 minutes. Add minced garlic and cook until fragrant.
- Increase heat to medium-high and add ground beef. Cook until browned, breaking it up with a spatula, about 8 minutes. Drain excess fat if necessary.
- Stir in shredded carrots and cook for another 3 minutes.
- Pour in canned tomatoes (crush them by hand), add tomato paste and Italian seasoning. Reduce heat to low and let simmer for about 20 minutes while cooking the pasta.
- In a separate pot, cook spaghetti according to package instructions until al dente.
- Combine cooked pasta with ragu sauce and serve hot, garnished with parmesan cheese if desired.
