  • 2 cans (15 oz each) black beans, rinsed
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 medium red onion, diced
  • 3 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 2 tsp curry powder
  • 2 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat a splash of oil in a large pot over medium heat. Sauté the diced red onion until translucent (about 5 minutes). Add minced garlic and grated ginger, cooking until fragrant (1 minute).
  2. Stir in curry powder, salt, and pepper; cook for another 2 minutes.
  3. Add the rinsed black beans and vegetable broth. Mix well.
  4. Slowly pour in coconut milk while stirring gently. Bring to a simmer and reduce heat to low; let it cook for about 10 minutes.
