- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Cook pasta in salted boiling water until al dente. Drain and reserve about 1 cup of pasta water.
- In a skillet over medium heat, add olive oil and sauté minced garlic for about 1 minute until fragrant.
- Add fresh spinach to the skillet and stir until wilted, approximately 3 minutes.
- Lower the heat, then mix in heavy cream and crumbled blue cheese until melted into a creamy sauce. If too thick, gradually add reserved pasta water.
- Combine cooked pasta with the sauce in the skillet, mixing gently to coat all noodles. Toss in toasted walnuts before serving.
- Serve immediately, garnished with extra walnuts and blue cheese if desired.
