  • 1 lb ground beef (80/20 fat content)
  • 1 cup breadcrumbs (fresh or Italian-style)
  • ½ cup grated Parmesan cheese
  • 1 cup dry red wine
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 2 tbsp tomato paste
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat oven to 375°F (190°C). In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, onion, garlic, salt, and pepper until well combined.
  2. Form the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat. Brown meatballs on all sides for about five minutes; remove and set aside.
  4. In the same skillet, sauté onion until translucent. Add garlic and tomato paste; stir for one minute.
  5. Pour in red wine and beef broth; scrape up any browned bits from the skillet. Return meatballs to the skillet and simmer covered for about 30 minutes.
  6. Serve the meatballs drizzled with gravy.
