- 2 tbsp extra virgin olive oil
- 2 medium onions, chopped
- 4 garlic cloves, minced
- 2 cups low-sodium beef broth
- 1 cup dry red wine
- 2 tbsp tomato paste
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- Salt and pepper to taste
Instructions
- Preheat oven to 300°F (150°C). In a large Dutch oven, heat olive oil over medium-high heat. Season short ribs with salt and pepper, searing on all sides for about 3-4 minutes until browned.
- Remove ribs; add onions and garlic to the pot. Sauté for five minutes until soft, scraping brown bits from the bottom.
- Stir in tomato paste and cook for one minute. Add red wine and simmer for five minutes before adding beef broth.
- Return short ribs to the pot; add thyme and rosemary, ensuring they are submerged in the liquid.
- Cover and braise in the oven for about three hours or until fork-tender.
- Serve hot with sauce drizzled over the top.
