- 1 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 2 medium ripe bananas (mashed)
- 2 cups all-purpose flour
- 1 cup rolled oats
- 1 tsp baking soda

- 1 cup semi-sweet chocolate chips
Instructions
- In a medium saucepan, brown the butter over medium heat until golden and nutty, about five minutes. Allow to cool slightly.
- Mash the ripe bananas in a bowl until smooth.
- In a large bowl, mix cooled browned butter with brown and granulated sugars until combined.
- Add one egg and the mashed bananas; mix until fully incorporated.
- In another bowl, whisk together flour, oats, baking soda, and salt. Gradually add to the wet mixture, stirring until just combined.
- Gently fold in chocolate chips.
- Drop tablespoon-sized portions onto lined baking sheets. Bake at 350°F (175°C) for 10-12 minutes or until edges are lightly golden. Cool on wire racks before serving.
